牛の個体の大小は美味しさに影響するか？
答えはYESです。
体の大小にかかわらず、牛一頭を構成する細胞の総数に相違はなく、
つまり個体のサイズがデカい場合には細胞の体積が増え小さい牛は細胞の体積が小さくなります。
その分細胞一つ一つに旨味がギュッと凝縮されるのです。
サイズのデカイ雄の牛肉よりサイズの小さい雌の肉が美味しい理由の一つがそこにあります。
