続 A5ランクの「A」とか「5」って何?
牛の等級はA〜Cの3段階、5〜1の5段階の計15段階あります。
歩留等級とは、牛の生体から内臓、骨、皮などを取り除いた枝肉から得られる部分肉の割合を評価します。
肉質等級とは、(1)脂肪交雑(サシ)(2)肉の色沢(3)肉の締まり及びきめ(4)脂肪の色沢と質、の4項目を5段階で評価して、4つの項目中、最も低い等級が肉質等級として判定されます。
年間約90万頭の牛が格付されますが、A5ランクに格付けされる牛は全体の20%弱です。
