カメノコとは

牛肉のモモ部位は大きく分けて、ソトモモ、ウチモモ、ランイチ、シンタマに分けられます

その中でシンタマはトモサンカク、シンシン、カメノコに分けられます

この3部位は同じシンタマなのですが、見た目も霜降りの入り方も柔らかさも違います

カメノコはその形が亀の甲羅に似ているのでカメノコ（亀の甲）と呼ばれています。

カメノコは、シンタマのなかで一番赤身が強いお肉で、赤身好きの方にはたまらない部位です
