今回より何回かに分けて みんな大好きハラミの
解体を投稿していこうとおもいます
が、 その前に知ってほしいことが一つ
以前の投稿でもあった通り、ハラミは内臓に分類されます
横隔膜のところですね
普通のお肉って
和牛だったり外国産っだったり取引の時に
しっかり分類されるんです
でも内臓ってそれがないんです
和牛も外国産もひとくくりなんです
なので、和牛のメスのハラミをくださいって
言ってもなかなか安定して仕入れをするのって
実はかなり難しいんです
でも
きたおのおまかせコースで使用するハラミは
国産Ａ５メス牛のハラミ
大事なのは信頼関係
仲買人との信頼関係で
特別に安定仕入れを実現しています

ちょっと自慢をさてせもらいました
ほんとに全然旨味が違うので
